Sacramento’s Secret


The Hidden House Sacramento does its name justice. Nestled on a cozy quiet street seats a red brick building that also hides some beautiful treasures inside. The multipurpose space hosts several different events daily from yoga to spoken word. They are also known for providing a platform to local chefs to showcase their talents. Enjoy one of their lovely selections of tea while you snack on a gluten free treat such as the mini carrot cupcakes. The walls will keep your eyes busy all day with the beautiful pieces of art that are on display.

I was honored with the task of catering a Wine Boot Camp Class held here on March 1. The event was hosted by the building’s manager and owner Leo Hickman and the wonderful April Richmond of 1 Black Girl 20 Black Wines. The guests were already bubbling and happy even before the wine started flowing. For this event we paired these 4 appetizers with wine; Black Olive and Roasted Bell Pepper Tapenade, Feta and Mint Canapé, Chutney Chicken Rolls and Before and After Chocolate Truffles (Raisin and Wine).
If you would like to try your hand at creating the Before and After Truffles you will need: 1/2 cup raisins, 1/4 cup wine, 1 cup thin biscuit cookies (wheatmeal) crushed, 1 tsp cinnamon, 1/3 cup brown sugar, 1/2 cup pecans (finely chopped), 1/4 cup heavy whipping cream, 8 oz dark chocolate (chopped), 1/4 cup syrup, and 1/3 cup pecans (ground). Let raisins soak in wine for at least 1 hour. Mix crushed cookies with sugar, cinnamon, and chopped pecans in a bowl. Combine cream, chocolate and syrup in pot and melt on low heat (make sure to stir continuously until melted). Add chocolate mixture to dry ingredients along with raisins and wine. Stir until well combined. Refrigerate for an hour or until mixture becomes firm. Roll one tablespoon of the mixture at a time in to small balls. Finish by rolling each ball in ground pecans for coating. Return to the refrigerator until firm.
Guests had such a great time that they have already planned another Boot Camp Class for Noon Saturday, March 22. Cost is $15 in advance and $20 at the door. Leo will be there to greet guest and make sure they are well taken care of. April will have a selection of sparkling wine and champagne for this class and I have a few secret selections of my own to pair with the bubbly beverages.
